Orange Spiced Edamame
 
 
Serves 4 as an appetizer.
Ingredients
  • 1, 16 ounce bag frozen edamame (in pods)
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon maple syrup
  • ½ teaspoon kosher salt
  • ½ teaspoon red pepper flakes
  • zest of one navel orange
Instructions
  1. Place frozen edamame in a microwave safe dish and cover. Defrost on high for 4 minutes.
  2. Heat olive oil in a saute pan over medium-high heat. Add edamame to pan and toss to coat with oil. Cook until edamame begin to brown, about 5 minutes, stirring frequently.
  3. Add maple syrup to pan and toss to coat. Cook edamame 3 minutes more until well browned and charred in spots. Turn off heat and sprinkle edamame with salt, red pepper flakes, and orange zest. Toss edamame and plate.
  4. Serve warm with an additional sprinkle of salt if desired.
